Our Story
At Yalla! Shawarma, we blend modern flavor with the heart of traditional Mediterranean cooking, creating a one-of-a-kind culinary experience built around our signature fire-grilled shawarma. What began as a humble food truck in Santa Fe, New Mexico, quickly became a community favorite thanks to our commitment to fresh ingredients, bold Mediterranean spices, and the vibrant spirit of the Southwest.
From the beginning, inclusivity has been at the core of our brand. We proudly offer halal and vegan-friendly options so everyone can enjoy food that’s flavorful, nourishing, and made with intention.
As our passion grew, so did Yalla.
In 2025, we expanded beyond New Mexico, opening our first brick-and-mortar restaurant in Jersey City, New Jersey—a full-circle moment for our three partners, who built much of their experience in the fast-paced New York City culinary scene. Bringing Yalla! Shawarma to Jersey City allowed us to reconnect with our roots and share our modern Mediterranean cuisine with a community we’ve long called home.
Shortly after, we opened our newest location in Downtown Albuquerque, New Mexico, spreading the Yalla flavor and energy deeper into the Land of Enchantment. With Albuquerque’s rich culture, diverse community, and growing food scene, it became the perfect place to continue our mission of delivering fresh, intentional, high-vibration food.
